Heartwarming Creamy Chicken Soup Perfect for Autumn
This popular and comforting dish makes good use of your autumn crops of carrots, potatoes, leaks and onions. A much loved family favourite; this warming soup is often thought of as having healing properties for seasonal colds, even if it just make you feel better for an hour or two..
Feel free to add and subtract ingredients, make it your own.
Ingredients
Stock Ingredients
- 1 Chicken carcass
- 1 Large Onion
- 2 Carrots
- 5 pepper corns
- 1 Bay leaf
- 1.8L Water
Soup Ingredients
- 800ml Chicken stock (That you just made)
- 2 Carrots
- 1 Onion
- 1 Leak
- 75g Butter
- 200g Potatoes
- 1 tbsp Plain flour
- 200ml Milk
Stock Instructions
Place a chicken carcass in large pan, cover with cold water.
Roughly chop the onions and carrots and add them to the stock
Add pepper corns and bay leaf
Bring everything to the boil and simmer for 1 hour.
Check after an hour, if the flavour is weak, leave to boil a little longer – check every 15min
Soup Instructions
Melt butter in a pan over a medium heat
Cook all vegetables in the buttery goodness.
Wash, peel and chop vegetables.
Once you’ve softened the onions then add potatoes.
Sprinkle flour and evenly coat the potatoes and onions.
Slowly add your stock and milk and stir to combine.
Bring everything to boil and simmer until potatoes are soft.
Add cream and season with salt and pepper to taste.
Final blend and serve in your favourite bowl.
